Dairy-Free Creamy Samosa Soup

Please note:  This soup is diabetic-friendly, dairy-free and gluten-free.  It can also be vegan by leaving out the chicken.  For a lower glycemic load you can leave out the carrots and peas.   I added just a little bit for color and taste.

Creamy soups have always been my comfort food.  My favorite soup was sold at a British/Indian shop downstairs from my work...a samosa soup. When I went dairy-free it was the end of that.

One day I decided to make a soup with all the low glycemic veggies in my fridge.  I added.....

and 3 big beautiful leeks.

Then I put it through the Vitamix. It made the soup incredibly creamy (as if it were actually full of cream!!!!!).  The initial base reminded me of that favorite samosa soup of mine.

Over the next few weeks, I tinkered around with the spices, added some chicken and some chickpeas ..... and that's how my favourite soup was born.   It's so good I feel guilty eating it!

I served this soup to four picky teenagers and they all came back for seconds.  No words needed to be exchanged.   I knew it was ready to be shared.

Dairy-Free Creamy Samosa Soup

(a.k.a. The covertly cabbage and celery soup!)

Makes 6-8 servings

2 Tbsp olive oil
3 leeks
3 garlic cloves
8 big celery stalks
1/2 to 3/4 of a big head of cabbage
1 medium carrot
1 tbsp of cumin
1 tbsp of garam masala
1 tbsp of cilantro
1 tsp of pureed ginger
1 can of chickpeas or pinto beans - drained and rinsed
6 cups of chicken stock
12 to 16 oz of chicken breast
1/2 cup of frozen peas
salt and pepper
1 Tbsp Kasoori Methi Fenugreek Leaves

Start by cooking your chicken breast, either in a pan or by baking them for 35-40 minutes at 350 degrees.  Season with salt, pepper and a bit of the garam masala.

In a big pot saute leeks and garlic in oil until  translucent.  Add cumin and garam masala and saute for a minute.  Add celery, carrots, and cabbage.

Cook until soft.  The volume will be reduced by about half.

Prepare 6 cups of chicken broth.

Put 1/3 of the veggies in the vitamix, add half of the chickpeas and fill with 2 cups of chicken stock.  Puree until smooth.  Add to a big pot.  If your using an immersion blender, just blend the whole thing until everything is finely chopped. 

Repeat with the second batch. 

Coarsely chop the last batch.  Add to stockpot.

Add the cooked chicken, frozen peas and cilantro.  Salt and pepper to taste.

Add the fenugreek leaves (also known as Kasoori Methi).  This hard to find spice adds a very unique taste to Indian dishes.  You can buy it very inexpensively in Indian food stores or order it online.

Tip:  Make a double batch and freeze into pucks or in single serving mason jars.

You'll have instant lunches and instant comfort food!
