Cinnamon Bun Oatmeal

Meet Cinnamon Bun Baked Oatmeal.

This oatmeal has all the decadence of cinnamon buns, but with less than 2 grams of added sugar per super filling serving!
Seriously, is there a better smell to wake up to?

To make this, I used the naturally sweet goodness of dates and korintje cinnamon.

Cinnamon Baked Oatmeal for 2:

*Recipe by Less Sugar Naturally*


1/3 cup of quick oats
2 Medjool dates (46 grams)
1/2 Tbsp of korintje cinnamon
2 tsp of butter

1 cup of quick oats
pinch of salt
1/2 cup almond milk
12 drops of SweetLeaf or NuNaturals Liquid Stevia
1 tsp of vanilla
1/2 cup of applesauce

2 Tbsp of cream cheese
1 tsp of butter
1/2 tsp of vanilla
5 drops of SweetLeaf or NuNaturals Liquid Stevia
1/2 tsp of icing sugar (optional - SFT and I find that a tiny bit of icing sugar gives the icing a more authentic taste)
2 tsp of half & half cream, or milk

1. Preheat oven to 375 degrees.

2. Set aside cream cheese and butter for topping to soften.

3. Pit and chop two Medjool dates.

4. In a food processor combine dates, 1/3 cup of oats, butter, and cinnamon. Pulse until dates mixture is fine, but not forming into dough. Set aside.

5. In a bowl combine the oatmeal ingredients. Mix well.

6. Butter two ramekin dishes.

healthy cinnamon bun baked oatmeal7. Fill ramekins by alternating between the date mixture and oatmeal mixture. When full, use a spoon to push in the date mixture in.

8. Bake for 20 mins. (based on convection toaster oven)

9. Let sit for 5-10 mins while you make your topping.

10. Using a small whisk, whip the topping ingredients together until light and fluffy. Add to the cinnamon bun oatmeal.

    1. Hi there, I haven't tried making these with alternatives grains. It's something you'd have to experiment with...which is part of the fun of cooking :)
